Question by question

Cooked rice shelf life, answered

How long does cooked rice last in the fridge?

4–6 days at 4°C (40°F) or colder (cooked). Count from the day it was cooked, opened or bought.

How long does cooked rice last in the freezer?

6 months for best quality at -18°C (0°F). Frozen food stays safe indefinitely; after that, texture and flavour fade.

How long does cooked rice last at room temperature?

No more than 2 hours, or 1 hour above 32°C (90°F). Perishable food left out longer should be thrown away.

How long does dry rice last?

2 years in the pantry.

How long is cooked rice good for past the expiration date?

FoodKeeper gives dry white rice 2 years in the pantry and brown rice 1 year — the oils in brown rice go rancid. Keep it sealed, cool and dry.

How can you tell if cooked rice is bad?

Sour or musty instead of neutral. Slimy, sticky film or unusually hard, dried grains. Yellow, grey or any green/black spots.

How long can cooked rice sit out?

2 hours at room temperature, 1 hour on a hot day above 32°C (90°F). Overnight is always too long.

Freezing

Can you freeze cooked rice?

Yes — freezes wellQuality holds for about 6 months at 0°F / -18°C. Frozen food stays safe indefinitely; only quality declines.
  1. 1Step 1

Cool the rice quickly — spread it on a tray so it drops below 40°F within an hour.

  2. 2Step 2

Portion into freezer bags, press flat and squeeze the air out; label with the date.

  3. 3Step 3

Reheat from frozen with a splash of water, covered, until steaming (165°F).

Thawing

How to thaw cooked rice

In the fridge

Safest. About 24 hours per 2.3 kg (5 lb); small packs overnight. Raw meat and seafood then keep 1–2 more days.

In cold water

Seal it in a leak-proof bag, submerge, and change the water every 30 minutes. About 30 minutes per 0.5 kg (1 lb). Cook right away.

In the microwave

Use the defrost setting and cook immediately, because parts of the food may start to cook.

Reheating

How to reheat cooked rice safely

1

Reheat to 74°C (165°F)

Check the thickest part with a food thermometer; it should be steaming hot all the way through.

2

Only once

Reheat just the portion you will eat. Each cool-and-reheat cycle gives bacteria another chance.

3

Cover and stir

In the microwave, cover the dish and stir halfway so there are no cold spots.

4

From the freezer

Thaw in the fridge first, or reheat straight from frozen and allow extra time.

The 2-hour rule

Cooked rice left out overnight

Rice left at room temperature for more than 2 hours (1 hour above 90°F) should be thrown away. Bacillus cereus spores survive cooking and produce heat-stable toxins; reheating does not make it safe.

Date labels

Best-by and use-by dates on cooked rice

Dry, unopened

FoodKeeper gives dry white rice 2 years in the pantry and brown rice 1 year — the oils in brown rice go rancid. Keep it sealed, cool and dry.

Cooked

There is no printed date; the clock starts when it cools. Count 4–6 days from the day you cooked it, not from the day you bought the rice.
